October 21 – Healdsburg, Calif. – Chef Kyle and Katina Connaughton are pleased to announce that Chris McFall has taken on a larger role overseeing the entire beverage program as Director of Wines at SingleThread. More recently, the restaurant’s head sommelier, the consummate beverage professional, first gained recognition in his hometown of Austin, Texas, when he was named Best New Sommelier by Wines & Spirits Magazine in 2012 for his work at Paggi House. McFall then managed and developed remarkable programs at two Michelin-starred Lazy Bear in San Francisco before joining the Single thread the wine team in the spring of 2020.
“I am thrilled to continue the legacy of the beverage program at SingleThread,” McFall said. “It is an honor to collaborate with the local and international winemakers who inspire us.”
McFall will oversee SingleThread’s highly curated 150-plus-page wine list, which includes bottles from around the world with a particular focus on Sonoma wines. A variety of specialty sake selections from SingleThread’s cellar, as well as a vibrant zero-proof beverage program, are now also under his care. McFall worked with little saint Bar Manager Matt Siegel and SingleThread Farm to expand non-alcoholic initiative. In 2021, SingleThread was awarded the coveted wine spectator Grand Award, which recognizes extraordinary wine lists, cellars and service around the world – an award held by only 97 restaurants worldwide.
SingleThread is a source-driven, farm-focused restaurant and inn that offers its diners and guests traditional preparations of seasonally inspired cuisine and a unique taste of the Sonoma wine region. The concept was born out of Kyle and Katina Connaughton’s upbringing in Southern California, as well as their extensive international travel and experiences living and cooking abroad in the UK and Japan. SingleThread is a three-star Michelin restaurant whose foundation is rooted in a multitude of Japanese principles and traditions surrounding hospitality, food culture and service. The restaurant focuses on the concept of ‘omotenashi’, which is described as a keen sense of hospitality and anticipation of a customer’s every need. At SingleThread, the relationship between farmer and chef is more than a side story; this is the heart of the experience.
In October 2020, The Michelin Guide honored SingleThread with a green star, its first year of recognizing restaurants in the United States for their sustainability efforts. In June 2021, its oenological program received the wine spectator Great price. SingleThread is ranked #37 in 2021 and #50 in 2022 in the World’s 50 Best Restaurant Awards.
